Mandy completed her Bachelor's and Postgraduate Diploma in Biological Sciences at the University of Auckland, New Zealand. She then went on to complete an Honour's degree in Wine Science prior to commencing PhD in Wine Microbiology at the University of Adelaide. Her research focused on characterising non-Saccharomyces yeast isolates from un-inoculated grape must fermentations (which included screening for oenological properties relevant to winemaking, evaluating their fermentative capacity, production of secondary metabolites and desirable volatile compounds), as a prerequisite to selection as potential starter cultures. Her work aimed to analyse the effect of non-Saccharomyces on the volatile composition and sensory properties of wines, as well as investigating the genes (comparative genomics study) involved in flavour biosynthesis.
