Dr Louise Pelle is a Postdoctoral Research Fellow in the School of Agriculture, Food and Wine. She is currently part of a project focused on low and no-alcohol wine where she is utilising her expertise in microbiology, biochemistry and molecular biology. Dr Pelle is working to improve multiple aspects of no and low alcohol wines, from microbial stability, to flavour retention and enhancement. The results will lead to recommendations for winemakers to aid the production of world-class no and low alcohol wine products.
Dr Pelle has ten years of scientific research experience and has worked on several molecular and microbiology-based projects. She completed a PhD in Wine Microbiology at the University of Adelaide in 2020, working on yeast-bacteria interactions in red wine fermentation. Dr Pelle continued in yeast research, working as a Postdoctoral Researcher at Université de Sherbrooke in Canada (2020-2023), investigating the life-cycle of telomerase and telomerase RNA.
