I am a Postdoctoral researcher and a Lecturer at The University of Adelaide working with the sensory characterisation of the Barossa Shiraz Terroir and teaching in the Department of Food Science. I have a Bachelor’s degree in Food Engineering working with intelligent packaging for my honours research project. I also worked in the R&D department at Foxtail Foods in the USA and as an operational manager at Minas Estate Coffee in Brazil before coming to Australia to complete my Doctor’s degree. My PhD at the University of Adelaide investigated the sensory aspects responsible for typicity in Australian Cabernet Sauvignon wines.
Currently, I am involved with the sensory characterisation of emerging wine varieties in Australia, lexicon development for Australian oysters' sensory attributes, and developing a model to substantiate provenance claims through molecular fingerprinting and machine learning the role of nutrigenomics in food preference and acceptance.
I am also responsible for "Food quality and regulation", and "Sensory evaluation of foods" undergraduate courses.
