My research integrates chemistry, food science, and sustainable processing to develop innovative solutions for the food and beverage industries. My current research focuses on the characterisation and valorisation of retentates generated during membrane filtration of wine. I investigate their chemical composition, stability, and potential applications as natural ingredients to improve the quality, functionality, and sensory properties of low- and no-alcohol (NOLO) wines and other food systems. This work combines advanced analytical techniques—including HPLC, LC-MS, GC-MS, UV-Vis spectroscopy, nanoparticle tracking analysis, and membrane technologies—to study wine macromolecules, bioactive compounds, and colloidal interactions that influence product quality and stability.
Prior to commencing my PhD, my research centred on natural products chemistry and food chemistry, with particular emphasis on the extraction, characterisation, and biological evaluation of plant-derived bioactive compounds. My work investigated the antioxidant, antifungal, and antibacterial activities of Solanum species and other natural products, as well as their potential applications in food, pharmaceutical, and agricultural systems. I also conducted research on plant tissue culture, alternative gelling agents, agro-industrial by-product valorisation, and emerging extraction technologies for natural compounds.
