Dr Alice Day is an Advanced Gastroenterology Research Dietitian in the Inflammatory Bowel Disease (IBD) Translational Research Group at The Queen Elizabeth Hospital and Basil Hetzel Institute and holds an adjunct clinical position as a senior and specialist IBD dietitian. Alice has an extensive clinical background delivering gastroenterology-focused nutrition care since 2008 and completed her PhD in 2021 examining a diet as therapy for ulcerative colitis. Alice is the diet research lead within her team's broader microbial manipulation program, pioneering diet and microbial therapies for gastrointestinal diseases and establishing new clinical service care models.
Dr Day is a national and international advocate and representative for gastroenterology-specialist dietitians and the value of integrating diet into the management of gastrointestinal conditions. Dr Day has been an advisor on national IBD models of care and research priorities frameworks for Crohn’s Colitis Australia, was an author on the European Crohn’s Colitis Organisation (ECCO) Consensus Guidelines on Diet and Nutrition in IBD (2025) and was been appointed the second Australian dietitian to represent southern hemisphere dietitians on Dietitians of ECCO committee (D-ECCO) for the tenure 2025-2028. Dr Day is leading an international mentoring programme for dietitians seeking support to specialised in the field of gastroenterology and is a co-founder of GI DREAM (gastroenterology dietitians in research, education, advocacy and mentoring).
Dr Day is exploring dietary constituents that modulate colonic hydrogen sulphide and inflammation in ulcerative colitis. Dr Day’s research is significantly contributing to understanding the role of diet, the gut microbiota and production of microbial metabolites in the relapsing remitting courses of IBD. Specifically, how to use diet to engineer host microbiota to influence host microbial community and function, optimise efficacy of pharmacological therapies and use of diet strategies to engraft faecal microbiota transplantation.

Dr Day is passionate about teaching, training and mentoring, eligible to primary supervise Masters and PhD candidates. Dr Day is also leading an international mentoring programme for dietitians working in the field of gastroenterology.
